Fruit salad with nut crème

For the fruit salad use a selection of fruit of your choice (choose seasonal fruit for optimal nutritional value) such as pawpaw, berries, mangoes, peaches, bananas, apricots etc.

For the nut crème:

  • 3 cups of Cashew nuts (soaked for about 2 hours)
  • 1 pitted Medjool date or 2 TBS honey
  • 1 cup freshly squeezed orange juice

Drain the nuts and blend all the ingredients together until smooth and creamy.


Serve in an attractive glass layering the fruit and the crème and garnish with either half a strawberry or slice of kiwi or to your liking.
